Vegetable Beef Soup
/My husband requests this soup almost anytime I suggest soup for dinner. He actually went out himself tonight and got the ground beef just so I could make this tonight! It must be a winner! It really is super easy and yummy, especially since it has been rainy and chilly here in Iowa this past week! I have never tried this in a crockpot but I imagine you could do it! I am also someone who likes to just throw things into a pot without measuring so if there is something in this recipe that you are not fond of, change it! Super easy!
Peel and dice up 1 russet potato
I chop up a handful of baby carrots to my liking
1 can corn
1 can green beans
1 can beef broth ( you could always use chicken, vegetable or water)
1 lb ground beef ( or chicken, turkey or meat free)
1 46oz can vegetable juice
1 tsp minced garlic (or more if you like)
1 tsp minced dried onion- because I hate chopping onions 😂 so if you use raw onion, maybe 1/2 yellow onion
salt and pepper to taste
Brown the ground beef with the minced garlic and add in the dried onion or raw onion.
Add in the potatoes and carrots so they can soften slightly. You can throw it all in if you have time, I have just always done this!
Next add in your broth, canned vegetables and vegetable juice. Salt and pepper to taste.
Bring soup to a boil. Once it has reached a boil, simmer until potatoes and carrots are tender. Serve with soda crackers! Enjoy!
