Saucy Salmon

This is my favorite sauce for salmon and it is super easy and healthy! Maybe you don't really like salmon? Try this meal with this sauce and then report back to me :) I will make you a salmon lover. Refreshing, light, and easy, what's not to love already? Check out your local grocery store or wherever you buy your fish and ask when they get their shipment in for the freshest tasting seafood! My local HyVee is Mondays and Wednesdays. I make my sauce a few hours earlier to let all of the flavors melt together but you don't have to! Start with a serving bowl, 1 individual container of greek plain yogurt, and 1-2 teaspoons of minced garlic. Mix together.

Next, take your cucumber, peel it, and cut in half. De-seed the cucumber halves with a small spoon. No one wants to eat slimy seeds!

Chop cucumber into small pieces about 1/4 to 1/2 inch cubes.

Add your chopped cucumbers to your yogurt mixture add salt and pepper to taste and stir well. Yep, thats it! Put in in the fridge covered until you are ready to serve it.

Need a full meal idea?? This has to be one of my favorite meals to make and eat. It's a crowd pleaser for sure. Since I am making this meal for just 2 people, I don't need more than what I am making here. If you want to make it for guests or your larger family, just double it! Two salmon filets ( I get it with no skin) topped with extra virgin olive oil, salt, and pepper. Same thing with asparagus, just snap off the ends first. My favorite salmon is grilled salmon. 1.) Easy clean up 2.) No fishy smell throughout my house 3.) Warm, crispy salmon with cool fresh cucumber sauce...drool.

And what is a meal without some carbs?? I adore this couscous in any flavor! You can find it near the rice at your grocery store or in the health food section, just ask! Water, oil, and included spice packet goes all together in 1 pot, starts to boil, pour in couscous, remove from heat, and cover. Fluff with a fork after 5 minutes and serve! Easier than rice, and tastier!

Celebrate your accomplishments and pour yourself a glass of wine...people will think you slaved all day making this :) A crisp white wine would work well with this meal! This is a Chardonnay from our WSJ wine club selection and yes it makes me feel like a superstar! Haha Cheers!!
