Spinach Artichoke Stuffed Peppers

Since I received a lot of messages on my Instagram, @ladyandredstyle, about the dish I made tonight for dinner, I thought I would write up a quick recipe to post for you guys! I just made it up tonight and find it super easy and delish! I am eating low carb right now and make note a whole bell pepper has about about 6 carbs. You could easily make these a day ahead if you needed to.

Ingredients:

1 Lb ground beef (could use any meat I suppose, ground turkey or chicken)

4 ozs shredded mozzarella cheese

1-1/2 cups of spinach artichoke dip- mine is pre-made dip from Costco

1 Tbsp minced garlic

3-4 peppers, hallowed out

salt and pepper to taste

Directions:

1.) Brown ground beef with minced garlic, season meat with salt and pepper. Brown then drain excess grease from pan. Turn off heat.

2.) Add spinach artichoke dip and stir until all meat is covered. Next, blend in the mozzarella cheese.

3.) Stuff the hollowed out pepper with the mixture. I use an 8X8 pan so they stand up. Cover with foil and bake at 350 for 30-45 minutes until peppers are tender.

You could add cheese to the top of each pepper if you wish. Just remove the foil with about 10 minutes left of baking and add cheese. 

Serve warm! XO
