Low Carb Cauliflower Casserole
/I am really trying to eat low to no carbs because I feel so much better when I do! Less bloat, more energy and less guilt 😂 I do enjoying cooking and trying new things so naturally when the weather gets crummy we all start to crave comfort food, well at least we do! I am not sure how many people are familiar with Tater tot casserole, but this is my take on that recipe, but eliminating the carbs. It turned out fantastic and leftovers the next day were even better.
Ingredients:
4oz cream cheese
1 head of cauliflower
1 can green beans
1 lb ground beef
salt and pepper to taste
1-2 Tbsp butter
4 oz mozzarella cheese
4 oz Colby jack cheese
2-3 Tbsp minced garlic
Directions:
1.) Brown ground beef with 1 Tbsp minced garlic and salt and pepper to taste. Drain grease. Put back on burner on low and add 2 oz cream cheese to the meat mixture. Melt together. Turn off heat.
2.) Cut cauliflower from the head into smaller pieces, bite size, and boil until tender. Once cooked, drain. Return to pan and add remaining cream cheese, butter, minced garlic, and salt and pepper to taste.
3.) I used a 9X10 glass dish. Preheat oven to 350 degrees. Mix ground beef with green beans, cauliflower mixture, and mozzarella cheese. Add to the dish. Cover with foil and bake for 30-40 minutes.
4.) Remove foil and add 4 oz Colby jack cheese to the top and bake another 10 min or so until cheese is melted. Serve!
Serves 4-6 people.
