Salmon Mustard Sauce
/Well I have renewed my blog page for another year and I have been having a hard time getting motivated to actually sit down and blog. Too many other things have my attention right now like a TODDLER! How did that even happen so fast? Well my princess is napping and I finally sat down to share a saucy goodness with you. I am a big fan lately of 1 dish wonders, as I like to call them. In our house we eat salmon at least 1-2 times per week and I get tired of eating it the same way, so it was time to get creative! My favorite way to fix it is to simply add a little olive oil, salt and pepper and bake for about 20 minutes at 350 degrees. I foil the baking sheet so my clean up is done in 1 swoop :)
My second favorite way to eat salmon is in my blog post Saucy Salmon! Just quick "search" it on my blog homepage and it will pop up for you to read that recipe. I tend to fix this one mostly in the summer months because of its refreshing taste! I know, I am weird!
Lastly is this concoction that I made up the other day and have added it to my recipes! Start with 2 5oz salmon filets and vegetable of choice. I think brussels sprouts or asparagus work best with this sauce. Line a baking sheet with foil (if you want easy clean up) and place veggies on one side and salmon filets on the other. Sprinkle olive oil over both, then salt and pepper both filets and veggies too. Next make the sauce. It only requires a small bowl.
Ingredients:
1 Tbsp butter
Dill weed
Thyme
1/2 lemon-its juice
Worcestershire sauce
Minced garlic
Capers
Dijon mustard
Now since I just made this up myself I am horrible at measuring for exact amounts. Start by putting the butter in a small bowl, heat in the microwave until melted. Then add about 2-3 shakes of the dill and thyme. Juice 1/2 of a lemon into the glass bowl. Next add about 2 shakes of the worcestershire sauce, 1 tsp of minced garlic, 1 tsp capers and about 1 Tbsp of dijon mustard. Mix all sauce ingredients together and spoon over salmon filets. With the left over sauce, poor over your veggies and toss them to coat.
Simply bake your one pan wonder at 350 degrees for about 20 minutes or until your salmon is cooked! Enjoy!
