Creme Brule for Two!

I love me some creme brule and I find myself trying it from just about every resturant that has it. So far my favorite has been the vanilla bean from Trostel's Dish, a local resturant with huge flavor and even better martinis! Go there! I struggle to find recipes for just two people and when I found this, I made it and loved it even more. This is a little more complex than my chocolate lava cake (previous blog post), but is just as delicious. What you will need: A blow torch, I bought mine at Williams Sonoma 1 cup heavy cream 2 egg yolks 1 teaspoon vanilla extract 1/4 cup sugar, plus 1 teaspoon for top 2 ramekins

1.) Preheat oven to 300 degrees. 2.) In a small pot, heat heavy cream and 1/4 cup sugar on high heat until little bubbles form around the edges, stirring frequently. Remove from heat.

3.) Let this cool for a few minutes or you will end up with scrambled eggs :/ Whisk egg yolks and vanilla in a bowl, then add cream mixture to the egg mixture a little at a time while whisking.

4.) Once all combined, pour evenly into two ramekins. Place ramekins in a pan ( My 8X8 square baking pan works best) and fill the pan with water until it is half way up on the ramekins. This is needed for baking. Place in oven and bake for 40 minutes. Once cooked, remove from water bath, cover with syran wrap, and let it set in the fridge for at least 3-4 hours. You can make this the night before and brule just before serving.

5.) After 3-4 hours in the fridge, pour 1 teaspoon of sugar on tops of creme brule, and shake it around to coat the top evenly.

6.) Get your brule torch out and have at it! I love mine crunchy :) Add fresh fruit to the top, serve, and enjoy!
