Crockpot Chicken Tortilla Soup

If you don't follow the @thestyleduo on IG you should be!  I not only post about style but I secretly love to cook, but let's keep it real, I like it easy! And this recipe couldn't be easier, not to mention super tasty! If you have a few seconds in the morning before work, errands or play, you can make this soup! I seriously modify this soup every time I make it because I may or may not have everything in the cabinet but it still turns out amazing! Adjust it to your taste too!

Super Easy Bruschetta!

Need a quick party appetizer or a before dinner snack? Here is your go-to recipe. If you don't have a Hy-Vee close by you are missing out. For those who have no clue what I am talking about, it's my local grocery store. Friendly, helpful people everywhere and the huge perk is the fuel saver card. Buy groceries you normally need and get money off of your gas...easy and awesome. So this recipe is made with some Hy-Vee brand goodies, if you don't have a Hy-Vee use any brand....if you must.Ingredients: Hy-Vee garlic chips ( Save 5 cents on your fuel saver this week!!!) Fiesta fresh salsa-I use mild Hy-Vee Mozzarella & Provolone cheese

20140617-161146-58306374.jpg Lay your garlic chips out on a cookie sheet, place 1 spoonful of salsa on each chip, sprinkle with cheese, and broil.

20140617-161523-58523318.jpg Seriously that is it! Broil on high for 2-5 minutes or until cheese is melted. Now sit back with you glass of wine and pretend you slaved away for hours making this appetizer :) Enjoy!

Frittata

This is my go-to breakfast because I am hungry as soon as I open my eyes and I am lazy at 7am so I tend to reach for crap I can eat STAT! I make this the night ahead (like Sunday) and eat it throughout the week. Super easy. Call me crazy but I like this cold sometimes after a morning run...don't act like you don't eat cold pizza?! Same difference :) I am not a quiche fan because the crust adds more calories than you need, and I don't like it re-heated. Customize this recipe with whatever you like in your "omelet" and enjoy. This recipe is also great for using up leftovers you have in the fridge. Ingredients: 6 eggs, beaten 1/4 cup grated Parmesan 1 tsp butter 1/2 tsp pepper Salt to taste 1 tbsp dried parsley 1/2 cup chopped Canadian bacon 3 spears asparagus, trimmed & cut 1/2 cup mushrooms

-other things to try in your frittata are: tomatoes, spinach, ham, bacon, sausage, onion, peppers etc.

To make: 1.) Turn oven on to Broil setting med-low. 2.) In a bowl whisk together eggs, parmesan, parsley, salt, & pepper.

20140514-142906.jpg 3.) I like to sauté my veggies before adding them to the frittata mix so they are nice and done and well seasoned. I will add garlic salt and Sriracha sauce depending on what is in my mix that week! Over medium heat add the butter to pan and melt. Throw in veggies & sauté for 3-5 minutes.

20140514-143127.jpg 4.) Pour your egg mixture into your pan and stir until all is blended. Cook for 5-7 minutes or until your mixture is set (no longer runny).

20140514-143815.jpg 5.) Place your frittata into the oven to broil for 3-4 minutes, until lightly browned. Remove from pan, allow to cool, then cut your portions.

Key Lime Pie

I LOVE key lime pie and never knew it until I met my hubby. We had the biggest piece I have ever seen and quite possibly the best I have ever had at a fun little Chicago restaurant. I wish I could remember the name of that place! After that perfect little date I have tried and tried to make a key lime pie without much success until this little recipe came along. I was at a cooking class and this was perfect ending to class.
